How to cook the rice

Water is 1.1–1.2 times the rice by volume. By weight, it depends on the pot.

How much water

The Japanese rice cup is 1 gō, 180 ml. Water is 1.1 to 1.2 times that — about 200 ml. That is measuring by volume.

By weight it depends on the pot. Counting evaporation, the baseline is 1.5 times the weight of the rice; a modern electric cooker loses less and wants 1.3–1.4. Donabe 1.5, rice cooker about 1.35.

  • Rice — 1 gō (180 ml / about 150 g)
  • Water by volume — about 200 ml
  • Water by weight, donabe — 1.5× the rice
  • Water by weight, rice cooker — 1.3–1.4× the rice

Method

Throw out the first water immediately. Dry rice drinks fastest, and you do not want it drinking bran. Then rinse gently 2 or 3 times. Pressure breaks the grains.

Soak 30 minutes in summer, 1 hour in winter. 30 minutes is the floor.

Rest it 10 to 15 minutes with the lid on. Then cut through it with the paddle to let the last steam out.
