Water is 1.1–1.2 times the rice by volume. By weight, it depends on the pot.水は米の体積の1.1〜1.2倍。重さで測るなら道具で変わる。
Drop-lid, low heat. Hard things first, seasoning late.落し蓋、弱火。硬いものから入れ、味は後半。
Clear soup is 0.6–0.9% salt. Clarity is the test.吸い物の塩分は0.6〜0.9%。澄んでいることが正しさ。
