Kaeshi is soy 5 : mirin 1 : sugar 1. Change only how much dashi you dilute it with, and every noodle broth follows.かえしは醤油5:みりん1:砂糖1。出汁で割る数だけ変えれば、つゆは全部作れる。
What kaeshi is
かえしとは何か
A soba shop does not build its broth one bowl at a time. It cooks soy, mirin and sugar together, lets it rest, and keeps the concentrate. That is kaeshi. Everything after it is dilution — the cold dip, the hot broth, the tempura dip.
そば屋は、つゆを一杯ずつ作らない。醤油・みりん・砂糖を煮て寝かせた濃い液を先に作っておく。これがかえし。あとは出汁で割るだけで、つけつゆも、かけつゆも、天つゆも出る。

醤油5:みりん1:砂糖1。にんべんとマルトモがまったく同じ数字を出している。醤油の角が、寝かせるあいだに落ちる。
There is a spread here too. Higeta Shoyu runs soy 10 : mirin 1 : sugar 2 — half the mirin. The National Mirin Association goes to 4 : 1 : 1. Five to one to one sits between them.

The dilution

How much dashi goes against one part kaeshi — that single number decides the dish. Cold broths are strong, hot ones weak, because cold blunts the tongue to salt.
かえし1に対して、出汁をいくつ入れるか。それだけで料理が変わる。冷たいつゆは濃く、温かいつゆは薄い。冷たいと舌が塩を感じにくいからだ。
Oden is genuinely disputed: Marutomo gives kaeshi 1 : dashi 5, the National Mirin Association dashi 20 : soy 1 : mirin 1. We print both. For sukiyaki no shared ratio existed across the sources we could reach, so it is not on this site.
おでんは資料が大きく割れている。マルトモはかえし1:出汁5、全国味淋協会はだし20:醤油1:みりん1。片方に丸めない。すき焼きの割り下は、確かめた資料に共通の型が無かったので、このサイトには載せない。

Making it
作り方
Hon-gaeshi: boil off the mirin's alcohol, melt the sugar into it, add the soy and stop the heat around 80°C. Never boil it. Cool it and let it rest one week to one month.
本がえし:みりんを煮切り、砂糖を溶かし、醤油を入れて80℃前後で火を止める。沸かさない。冷まして一週間から一ヶ月寝かせる。
Nama-gaeshi: no heat at all. Dissolve the sugar and mirin into the soy and let it rest. More aroma survives. This is the one for a hurry.
生がえし:加熱しない。醤油に砂糖とみりんを溶かして寝かせるだけ。香りが強く残る。急ぐならこちら。
