Season is not a mood
旬は気分ではない
Shun is the stretch of the year when an ingredient is fresher and tastes better than at any other time. And it is not only about taste.
旬とは、その食材が他の時期よりも新鮮でおいしく食べられる時期のこと。そして味の話だけではない。
Tomato carotene measures 528 µg in July, at the height of the season. In November it is 241 µg — less than half. Spinach vitamin C is 84 mg in December and 17 mg in September: a fifth. Same vegetable, same hundred grams.
トマトのカロテンは、出回り期の7月に528μg。11月には241μgで、半分以下になる。ほうれん草のビタミンCは12月に84mg、9月には17mg。五分の一だ。同じ野菜の、同じ100gで。
In season it is cheap, it tastes best, and it carries the most nutrition. Once a year, all three peak together.
旬のものは安く、うまく、栄養が多い。三つが同時に最良になる時期が、年に一度ある。
Hashiri, sakari, nagori
走り、盛り、名残
A restaurant splits the season in three. Hashiri is the first of it — the season's first bonito, valued for being early. Sakari is the height, when supply is widest, the flavour best and the price settled. Nagori is the end of it, thinning out, served as something taking its leave.
料理屋は旬を三つに割る。走りは出始め。初鰹のように、早いことに値打ちがある。盛りは最も多く出回る時期で、味がよく値も落ち着く。名残は終わりかけ。数が減り、去っていくものとして扱う。
The same ingredient is handled differently at each end. Hashiri gets a lighter hand; nagori gets longer heat. Even the words on the menu change.
同じ食材でも、走りと名残では扱いが変わる。走りは軽く、名残は深く火を入れる。品書きの言葉も変わる。
The four seasons
四季
The representative ingredients of each season. It shifts by a month either way with the region and the year.
